Last night I made some peanut butter cookies for the kids to take to school in their lunhces. Reminds me of my school days, homemade cookies for dessert and after school snacks. It's such a yummy recipe, thought I'd share...
Reeses Peanut Butter Cup Cookies
Beat well:
1 1/4 cup brown sugar
3/4 cup peanut butter
1/2 cup butter
3 Tbls milk
1 Tbls vanilla
1 egg
Add agg till just blended.
Combine and add on low speed till just blended:
1 3/4 cup sifted flour
3/4 tsp baking soda
3/4 tsp salt
Preheat oven to 375 degrees. Scoop cookie dough into mini muffin cups, filling about 3/4ths full. Bake for 7-8 minutes. Don't over-bake. When out of the oven, press a peanut butter cup into each cookie. Let cool at least 2 minutes in pan, and then remove to a wire rack to cool the rest of the way.
